I already had several pieces of Scanpan cookware which I had cared for meticulously, but which lost much of their nonstick property over time. Needless to say, this 11" saute pan from Swiss Diamond was going to be compared to its Danish counterparts. So far, the Swiss Diamond seems to be far superior in every respect. Its cooking surface is not as smooth as Scanpan, and that seems to be by design, as nothing much sticks to the slightly rougher surface, and cleanup is a snap, without the scrubbing that Scanpan requires. If you get a Swiss Diamond pan with a lid, you will appreciate that the outer rim is reinforced with metal (no more chipping!) and the knob acts as a steam vent when you turn it--a clever design. Also, the handle is ergonomically designed, keeping your hand a bit farther removed from the heat source. The handle's rivets ARE present on the pan's interior, unlike the sleek Scanpan design, but the interior cleans up nicely. So far, so great!

This is a great pan. Aside from the fact that it is easily the best non-stick on the market (and I have used Anolon, Calphalon and Scanpan), what continues to impress me most about this pan is its even heat distribution. There are no hot spots, not even the center. When sauteing the food colours evenly (even when the pan is a little overcrowded); when stewing, you often see tight little bubbles across the surfact of your food, demonstrating how even the heat distribution is. This pan also makes a fine risotto.

Oh, and did I mention its non-stick is simply the best. Clean up is a breeze. Nothing sticks. Even baked on pasta sauce wipes out with a little water. The surface on Swiss Diamond is so good that if you make pancakes it is often hard to get the turner under the pancake without sending the pancake to the other side of the pan!

Swiss Diamond is the KING of non-stick, as not only is their surface No. 1, but the quality of their pans is second to none. I own two Swiss Diamond pieces, I plan to buy more, and I couldn't recommend these pans more highly. This is the pan I reach for the most!

If I could give it 6 stars I would! I love my Swiss Diamond pans. This is my third. They really are non-stick without being made with Teflon, they cook great, and wash up in a snap. I am gradually replacing all my pots with Swiss Diamond. Yes, they are expensive, but well worth the money.
