1. the handle become hot and its design does not ensure adequate conductivity for cooling and comfortable handling. 2. Much more bothersome : while using the pan only for omelette and with an oil spray, it DID get burned and the eggs stick to it.
Way lower than the usual quality standards of the TYPOON brand.

hands down -- the best non stick crepe pan from among the five i've tested.
first: the carbon steel offers superfast heating and cooking. i found the pan to be well designed in the areas of weight, balance, and length/placement of handle and it is super shallow with a low-slanted rim. in other words, perfect for making crepes.
second: the probon non-stick finish creates a superslick surface (as slick as my scanpan fry pan), however, I was able to "brown" one of the crepes without burning it or the pan (the pan offered immediate release when i lifted the crepe). for the final "am i keeping it or returning it" test, i found that with the pan's superslick surface, it was easy for me to quickly swirl the batter from the center-out-to-the-rim thus bypassing the need for a crepe tool or the back of spoon resulting in ...
third: large (11 inch), thin, effortless, beautiful crepes. all for the low, low price of $11. i love it!
for the next test in my very own kitchen, i plan to see if i can cook crepes in this pan without first lightly oil-misting the cooking surface. regardless out of the test outcome, i'm keeping it!
12/2/06 UPDATE: i've yet to get the nerve to test without first lightly oiling the pan, however, this morning i cooked my first batch of pancakes which meant my batter was a bit thicker than crepe batter. i found that the bottom of the pan, which is also non-stick, created an opportunity for the pan to easily slide about the stove's electric coil-top if i was less than light-handed with flipping over the pancakes to cook the opposite side. definitely an unexpected annoyance, but, not to be doubted due to the super-slick non-stick surface. i still think it's a great crepe pan so i will either use it as a dedicated crepe pan OR grab hold of the handle before flipping pancakes ;-) it offered a nice, slightly crispy exterior to my pancakes using a medium-high setting (which is just how i like my pancakes).
