This knife has all but replaced my collection of chef's knives. It cuts everything from cheese to tomatoes effortlessly and smoothly. It keeps its edge well and only needs a touch with the sharpening steel every few days to maintain that edge.

Highly recommended.

My wife had been wanting this knife for a while, so I ordered this for her for Valentine's Day. She's an avid cook, so this knife has already gotten a lot of use. So far, we don't have any complaints!

Also, this may be obvious, but the blade of this knife is incredibly sharp! My wife has already nicked her finger once or twice ;)

I ordered this knife for my mother as a Christmas present but returned it after seeing how cheaply it's made. Although I read the product description and knew it was designed as a more economical alternative to Wusthof's Classic line of cutlery, I decided to give it a chance because my mom isn't that much into cooking. I didn't test it out, but it's evident by the look and feel that the quality and craftsmanship is far below what I expected, and I'm disappointed in Wusthof for selling such a low quality product. I own several pieces from their Classic line of knives, including Wuesthof Classic 7-Inch Hollow Edge Santoku Knife, and absolutely love them. So, don't be scared away from the Wusthof name, just stick to the Classic line and don't buy this knife.

I am a bit of a nut for kitchen gadgets, and I have to say that this is one of my two favorite knives (along with a 4" Henckels paring knife). It is both very sturdy and comfortable, but also light and thin, which makes a huge difference when cutting into things like butternut squash or large potatoes or root vegetables. It really is much better than most chef or santoku's, IMHO.

As to sharpening, I use an Aladdin Knife sharpener, a wall hanging unit which works very well with this and all my knives. It is not a purist's tool, but it works just right for me. It only needs sharpening about once a month for me, and does very well.

This knife is a joy to handle and cuts like a dream as long as it is sharp. There's the problem. I have found that it doesn't hold and edge as it should. Even if I use a steel to align the edge before every use. I would/will purchase another brand of Satoku. Not Wusthof's usual quality.
