This flexible fillet knife moves with you, making it easier to guide it around the fish's head and tail and close to the fish's skeleton for better filleting. Part of Wuesthof's Gourmet series of knives, this 8-inch fillet knife is a less expensive version of the knives in the manufacturer's Classic series. Although the blade is still made of high-carbon steel with a stain-resistant alloy, the difference is that the blade is a thinner quality metal and is cut by a precision laser instead of by hand. The blade still has an ideal shape as it is ground and polished by computer to ensure perfect tapering from tip to bolster. Full tangs extend through the synthetic traditional-style handles, which are triple-riveted for strength. This knife is dishwasher-safe but hand washing is recommended to preserve the edge on the blade. The Gourmet series is an excellent alternative for those who want to own quality Wuesthof cutlery but are on a budget. --Cristina Vaamonde

I have a number of forged Wusthof knives, and I love them. Until I ordered this knife, I did not know that Wusthof had a line of relatively ..., stamped knives. The difference in quality between this knive and my forged Wusthof knives is significant. I must add, however, that the superior forged knives have prices to match. A forged Wusthof fillet knife would be three times the price.

This is a very good, very sharp knife, but one thing that struck me as odd was that the Wusthof logo on the knife is only a sticker, which comes off on the firts wash...that seems pretty cheap for [this]knife. But other than that, it is a good knife.

Wuesthof knives are perhaps the best knives on the market today. For home use to resturants these knives have proven themselves.
durable, high quality, ergonomic, there is nothing I can say that will prove to you how excellent these knives are. You will just have to purchase a set and see for yourself. I have a wide variety of Wuesthof knives and I plan on collecting as many as I can. I have used no other knife that does it's job so well. from deboning to slicing bread Wuesthof knives will be a kitchen companion you will not want to live without!

Now go buy yourself a set! and take a look at Analon cookware while your at it. you will never buy a pot from Wal-Mart again!
