5 out of 5 stars Great Product   August 23, 2008
I bought this product 2 years ago and couldn't be happier with it. It performs exactly as described. It's very easy to use and becasue of that I keep my knives sharp and that makes cooking much more enjoyable and much easier. I had one problem, the palstic guide on the front of the device failed but the company honored the three year warrenty and fixed it quickly and returned it to me. I highly reccommend this product.

4 out of 5 stars Stirring Sharpener Story   June 12, 2008
I've read the reviews both good and bad on this sharpener and for the life of me could not reconcile the two. So, based on the majority of the reviews being good, I bought it here from Amazon.

The end result, the sharpener is quite good, but the manual is somewhat misleading and if you follow the instructions in the manual exactly, it will not produce the results that you want. I read and re-read the manual before sharpening, did a practice test run before putting the knives through, so imagine my surprise when my Henckels Four Stars were not sharpening. However, when I passed a crummy little dinged up OXO knife through, it was sharpened as if it were brand new. So apparently, the sharpener was doing something, but I couldn't figure out how to get the OXO results on the Henckels knives.

Then I referred back to that wonderful Cook's Illustrated review which gave this sharpener a Highly Recommended rating. For those of you who don't know, Cooks Illustrated does not accept advertising and generally has pretty objective reviews of the products it tests. Cooks Illustrated said they passed their knives through 15 times before they became sharp. So that's what I did. 15 times, each knife. And then I sharpened them on a separate sharpening steel, per the instructions of Alton Brown (of Food Network fame).

The result, exceptionally sharp knives. Exceptionally. This product, when used in that manner, will produce very very sharp knives. Also, with what a professional knife sharpener charges, if you have several knives, like we do, after a few uses, this sharpener will pay for itself.

Why four stars then? The confusion caused by the unclear manual was somewhat frustrating. For this kind of money, this model should have a sharpening steel on it in addition to the motorized stage 2 sharpening wheel. Not perfect, but works very well.

5 out of 5 stars Easy and quick sharpener   May 24, 2008
I used to sharpen my knives with many different hand sharpening tools. They would do a good job on them, but they always took planning and a fair amount of work. That led to knives not getting sharpened nearly as often as they should have. I finally got tired of dull knives and got this.

At first I thought I would just sharpen my cheaper knives with it and do the better ones the old way. I found out it does a very good job on all knives and haven't sharpened any knife with anything else for a very long time. It's quick and does a very good job of sharpening. What more could you ask for.

Highly recommended!

1 out of 5 stars Confusing Image Different Than Product Description   May 12, 2008

This product is advertised as a M130 but the picture is NOT the 130, but a previous model 120. The M130 is shown elsewhere at $149; so this is very confusing. Why offer a M130 at $130 w/a picture of the M120 and in another place offer a M130 at $149 w/the correct picture??? Tells me that if you order the $130 one, thinking you're ordering the M130, you may instead get the M120 model!! TOO confusing if you are specifically trying to order the EXACT thing! Picture should be accurate!!

1 out of 5 stars Scratches blades!   February 12, 2008

I purchased this model based on the positive reviews here, and the recommendation from Cook's Illustrated, but I haven't had the same positive experience. It puts long fine scratches on the sides of the blades. I know it's just cosmetic, but I just can't subject my Wusthofs to it. I rated it 1 star, because hopefully it will get the attention of people for whom this might be a determining factor in their purchasing decision. Most of the reviews don't mention this problem, and many of the reviews that mention it, still have a high rating, so it may be overlooked by someone looking for critical feedback.

There are also a couple of other negatives that I found with this model. Depending on the knife, it can be difficult to draw it through the guides and feel the correct pressure, so getting a nice even edge can be difficult at times. Also, you can't sharpen the blade right up to the bolster due to the shape of the guides. One last caveat, this model will not sharpen Santoku knives to the standard of 17 degrees, which is sharper than the German standard on which this model is based. To be fair, it does a decent job of sharpening your average knife, and I will still use it on my cheap knives, but if I had it to do over, I would not have purchased this model (especially considering the price).
