This handsome Coppertail knife is known as the East/West because it combines the traditional scalloped edge of a Japanese santoku, excellent for thin slicing of delicate foods such as tomatoes, with the rocking and chopping motion of a Western chef's knife. One piece construction. I broke the blade off of the handle on my old Chef's knife. This one is beautiful, well-balanced in my hand and it performs great. Worth every penny. I will never throw away good money on a cheap knife again.

Great for chopping or slicing just aboout anything. Large, but handles very well. Not heavy.
Use it often.
