Amazon.com Review
Chefs who love Australian-designed Furi Pro knives will swoon over the new premium-level Furi FX. Standing for Forged Exoskeleton, the FX knives are constructed out of a single piece of German stainless steel, resulting in superior strength and hygiene (no cracks or joints to collect bacteria). As with Furi Pro knives, the FX wedged handle is designed to prevent the hand from slipping toward the blade during use, and features a finger-notch and ergonomic curve that reduce strain and calluses, especially for arthritis sufferers.

This handsome Coppertail knife is known as the East/West because it combines the traditional scalloped edge of a Japanese santoku, excellent for thin slicing of delicate foods such as tomatoes, with the rocking and chopping motion of a Western chef's knife. The beautifully balanced knife feels substantially hefty and features an extremely sharp blade that is easily sharpened. As the blade wears and lightens over time, the copper "tail" on the handle can be filed to counterbalance the weight. At 9 inches in length, the knife makes a superb all-around kitchen knife, and a fabulous gift for the professional home chef. Like all Furi knives, the Coppertail should be washed and dried by hand, and carries a lifetime warranty. --Ann Bieri

Customer Reviews:

5 out of 5 stars excellent knife...   March 27, 2008
Love this knife. I've had adequate knives in the past, your standard run of the mill Chicago Cutlery "Factory Outlet" wedding registry specials, but I'm bad with caring for wood-handled knives, tend to think of them as a 2-3 year shelf-life (er, drawer-life, perhaps), and I treat them accordingly...this was one of my first high-end knives, and it makes me wonder how I've gotten by without upgrading for this long...

I haven't had to sharpen the knife yet, certainly not so much as to throw off the weighting, so the copper counterweight is purely decorative at this point, but an interesting addition nonetheless. Particularly if you're into juggling knives (personally, I generally refrain), where such fine tuning of the knife's center of gravity might be of greater importance (note: this reviewer does *not* recommend knife-juggling with this product).

Great weighting, allows very fine slicing, and no weird cracks and crevasses to hide bacteria, chicken-based fluids, and other nastiness. Makes it easier to clean, too, I've never once been tempted to run it through the dishwasher rather than deal with bits that stick to knives of lesser design.

Some bit of literature on the package says the Furi focused on functional design over aesthetics...Nonetheless, it's a great looking knife...then again, maybe that's just because I'm a geek with no aesthetic sensibilities.

I actually bought this knife on ebay and what a great knife it is. Sharp and well balanced. I highly recommend it. It's a little large, but extremely light and easy to use. I use it to cut everything. You won't be disappointed.
