Amazon.com Review
The unique "East/West" blade design of Fueri Pro Coppertail knives combines the sharpness and scalloping of a Santoku with the thinness and curved edge of a chef's knife. The result is cutlery that is superb for straight slicing without sticking but that still works into a great rocking motion for speedy mincing or chopping. Not to mention that Coppertail knives are the cutlery of choice for cookbook author and Food Network host Rachael Ray, who has a great deal of clout with home chefs.

This box set packs two Coppertail cook's knife/vegetable chopper knives. The first has a 5-inch blade for handling smaller fare, such as halving cherry tomatoes or slicing mushrooms. The longer 7-inch blade is ideal for bigger jobs, such as chiffonading spinach or slicing large tomatoes. Knives are made of a single piece of high-carbon Japanese stainless-steel alloy so there are no gaps where food particles can get caught and no plastic pieces or rivets that can potentially fall off over time. The strength of this steel allows for an extremely sharp cutting edge that requires minimal maintenance to keep its sharpness.

The ergonomically shaped handles on this cutlery feel lightweight yet properly balanced and provide a comfortable grip through hours of cooking. Handles are curved but have wedge-shaped angles on the top and bottom to reduce the amount of squeezing and hand strain and to prevent slipping when hands are wet or oily. Additionally, these knives have a notch just beyond the bolster that comfortably cradles the index finger and are the only brand with a counterbalancing copper insert at the ends to maintain the ideal weight between handle and blade. After years of sharpenings, the blade can lose a great deal of metal, which throws off the balance of the blade. The copper insert can be honed down to reduce handle weight and restore the proper balance.

These two knives come in a gorgeous bamboo wood gift/storage box with sturdy metal hinges and a magnetic closure on the front. Engineered in Australia and manufactured in China, Fueri Pro cutlery is covered by a limited lifetime warranty. --Cristina Vaamonde

Product Description
In fewer than five years, Rachael Ray has radically changed the way America cooks dinner. Her perky-girl-next-door swagger, her catchphrases for techniques, and her dinner ideology of simpler, less expensive and just in time have sold billions of books and placed her at the top of the talent heap of food television personalities. The F??ri RR East/West Coppertail is two knives in one: a chef's knife shape for classic rocking and sawing action (for heavy professional work) and fine chopper shape for fast vertical chopping (for softer vegetables). It has unique scalloped edge and Coppertail handle. With no handle gaps or joins, there's nowhere for germs to hide, making F??ri Pro one of the easiest knives to keep clean.A solid copper plug is fused into the end of the handle for easy rebalancing, i.e. as the blade wears and becomes lighter over time, copper is filed from the tails to rebalance the knife. The handle wedges into the hand, requiring less 'squeeze' to perform repetitive cutting tasks, resulting in less fatigue and hand strain than conventional handles. F??ri Pro is durable because there are no wood, plastic, rivets or separate pieces that can deteriorate over time.Pro Bamboo Set Includes: 7-in. Coppertail East/West Knife5-in. 3 out of 5 stars A warning   July 14, 2008

This isn't so much a review of the knife as it is of the user. If you are not used to using high quality knives like this, you may want to think twice. As the other reviewer has stated 'it's not a knife, it's a big razor blade', I found this to be true the hard way. I was slicing an onion and 'touched' my fingertip with the edge of the blade, and I nearly cut all the way through. Almost no pressure was involved. It scared me terribly and resulted in a trip to the hospital. No stitches, thankfully, but I did get a pressure dressing. Since then my finger has knit together. I can see clearly where it also cut though my fingernail.
These knives are simply TOO sharp for the average uninformed consumer. The fault lies with me for not taking the other reviews seriously. I've never encountered something so dire before. So be careful. If you are like my husband, who likes these knives because of their weight and construction, these may be for you. But if you are looking for a shortcut for dicing up onions or other lightweight tasks - get something else.

4 out of 5 stars My wife loves these Knifes   June 10, 2008
My wife loves these knives, they very light for her to use and she is happy with them.

5 out of 5 stars Extremely sharp and comfortable   May 31, 2008
My wife wanted these knives for a while. I surprised her with them recently. We both think they are terriific. The blades are as sharp as scalpels and the OZI sharpener we added to the order is a remarkable device. It put a razor sharp edge on all of our older knives much better than the electric sharpener we have been using for a few years. All in all - well work the investment.

Be sure to hand wash and dry to avoid any blade wear and potential for rust.

Highly recommended!
