This is my favorite cooking tool in the kitchen! I use it for baking cookies, cooking fish dishes, and more. Nothing burns nor sticks to the pan when you use this baking sheet. I highly recommend it!

These Exopat baking sheets are wonderful, and I can't imagine going back to greasing pans or aluminum foil. I roll cookie dough right onto the Exopat, cut out with cookie cutters on the Exopat, and peel away the excess dough around the shapes I have just cut out. No more having to transfer the cut-out dough from the countertop to the baking sheet, so no more distortion of the cookie shapes. When I have a batch of cookies in the oven, I prepare another batch on a second Exopat and have it ready to slap onto the cookie sheet as soon as the first batch comes out. This way, one baking sheet is all I need, and there's no lag time or energy loss between the batches. I roll pie-crust dough right on the Exopat, lift up the Exopat with the dough on it, and flip it over to slap the dough straight into the pie pan. No more having to fold in quarters when transfering to the pan. I also use these for patting out biscuit dough and cutting out biscuits. No more sticky mess on the countertop. These are great for kneading bread dough on, too. I also bake spare ribs on them, so clean-up is easy. Goodness, I use these Exopats for just about everything! Money well spent!

If you don't know what it is, just order it and try to figure out if there's anything it can't do. If you do know what it is, you should be ordering another one _right now_. This is a good price and AFAIK the Exopat is just as good as the (more expensive) Silpat. Neat tip; go get yourself a Microplane Grater/Zester and a good block of Parmaseano Reggiano (or the like). Grate 2 cups cheese, place large pinches in 2" circles on the Exopat. Repeat - should make 6 total. Bake at 350 for 7 minutes. These are Parmasean Crisps, like potato chips, and they'll slide right off the Exopat!

I thought I'd try the Matfer Exopat baking sheet because I had recently run out of baker's parchment and was annoyed at the inconvenience of having to run to the store to buy more. The concept of the baking sheet intrigued me, so I decided to try it. It is so easy to use! It fits my favorite baking pan perfectly. I can roll the dough right on the mat in the pan and pop it in the oven. The results are even better than I had with parchment paper. The baking sheet is easy to clean also, and I store it in the baking pan, so it saves space.

I've been thinking of buying either Silpat or Matfor baking sheets for several years but the price discouraged me. I finally found them on sale here on Amazon.com.I'm very happy with them and the way they work, especially with sticky sugary recipies. However, I noticed that 3 out of five of my new baking sheets seem to be more flimsy than the other two. It doesn't affect baking quality but I wonder if Matfor makes two grades in this product line. Sheets marked "v-11" are thicker and flatter than sheets marked "u-12". I'm a baking maniac so even if the price a factor, it will be a lot cheaper than parchment in the run. They also worked well when making hard candy for Easter Baskets this year. I didn't have to struggle with parchment and spatulas when forming the hot candy. They might seem pricy but once you use them, you'll wonder how you ever did without them.
