  knife sharpener December 30, 2007 we sharpened old knives very quickly. The device was very easy to use. If had a complaint, it would be the number of options from Chef's Choice without a clear distinction of the differences. After all, how many ways can there be to sharpen a knife?
  Ideal Electric Sharpener October 7, 2007 This is my first electric sharpener. I saw the brand in a Cook's Illustrated review and was persuaded by that and the comments of others here. There is a new, more expensive model but I feel that this one is ideal for my use. The instructions are good and explain the sharpening technique well. I picked up the knack of letting the magnet guide the knife and managed to get the pull speed right too. The result is very sharp knives. The unit is sturdy and sits firmly on the kitchen surface. There is noise from the motor - a whir - and the grating sound as the knife is sharpened. Neither are excessive or troublesome. Highly recommended.

The Chef's Choice Professional puts a serviceable edge on a knife and does it quickly. It even allows you to bring abused and knicked knives back from the useless pile.
Note that I said 'serviceable'. The edge is sharp, but you'll never confuse it with a new or professionally sharpened knife. You can get a similar level of sharpness from Chef's Choice hand-powered sharpeners. Two models, at about thirty and twenty-two dollars also provide you with a usably sharp knife in not much more time than this powered model.
Finally, if you want a wickedly sharp knife, you'll need to go back to the old water-stone method.

I live a very sharp knife but usually don't have the time to do it right on my Razor's Edge Stone system. This will get you a good working edge in a few minutes, instead of the hour I spend to get a perfect edge. If you use a knife for Butchering and skinning this will keep you going I would like to try one of the higher priced units but not willing to pay unless someone will let me try one before I buy
