This product does quickly what no other device has done for me before. It truly sharpens knives to a fine honed edge in just a few seconds, with very little skill required and a short learning curve.
Purists will still want the kind of shape and edge that a stone will produce after many minutes of careful (and often unsuccessful in my hands) work. But this product has been well thought out, seems pretty sturdy and it works. Large thick blades may not fit well.

It allows you to get two types of edge. One is a smooth, finely honed edge that cuts very smoothly. I don't prefer that. The other is also a finely honed edge, but there is just enough irregularities on the edge to give a momentary sawing action as it starts to cut. I am not enough of an aficionado to have different knives with different types of edges. I prefer the "bite".

There are a couple of ways to know your knife is well honed. Look at the edge while holding the blade directly perpendicular to your line of vision. A well-honed edge will not reflect any light, because the edge is actually thinner than the wavelengths of visible light. The other way is to touch the edge to your thumbnail and try to pull it sideways (NOT in a cutting direction) across the nail. If it is dull, it will slide. If it sharp, it will "stick".

The Chef's Choice M130 achieves that level of sharpening in moments.

I bought the sharpening station because it was highly rated by cooks illustrated. It is a great piece of equipment, I have expensive knives and want to keep them sharp without damaging the blades, this did the job. My husband noticed immediately how sharp the knives were. I highly recommend it, I just read the instructions first and practiced using a cheap knife and the results were amazing.

This is my second Chef's Choice Sharpening station and conveniently this one addressed the problem I had with my first one - that is how to keep the razor sharp edge without continuous resharpening. After washing my knives I simply run them through Station 2 (no need to turn on the machine)ten times to fine tune the edge. I assume it's synonomous with using a chef's steel. A little bit of work but fantastic results. I only wish I bought the chrome edition since I use it every day and thus leave it out.

I was very disappointed when I tried this out, it performed poorly. I could get a knife sharper, faster myself, manually.
I put it aside after the holidays and just tried it again. I realized that one problem was the middle sharpening station (#2), nothing was happening. It was almost impossible to see anything, but with a very bright light and glass, I could see that there was nothing at the bottom or sides of the guides, no stone, no steel, no disc. Manufacturing mistake, wrong model? I don't know. Past 30 days, I can't return it and no luck with chefs choice. Buyer beware.
