5 out of 5 stars Sharpens as advertised.   February 20, 2008

After years of using a handheld manual sharpener that made knives a little sharper than when I started on them, we decided to try this sharpener, mainly because of these reviews. Though some professional food artists may want more, I cannot imagine getting any sharper knives in less time with any less effort than this machine produces. Keep the bandaids handy until you adjust to the new edges, my wife has used two in the last 4 days. Looking at the rest of the Chef's Choice line, I am not too sure that one of the lower models would not do just as well as this unit.

5 out of 5 stars Great Sharpener   February 15, 2008

I've used it for serrated and non-serrated knives. On non-serrated knives it does an excellent job. On serrated knives it did an OK job, knives were sharper but not razor sharp like the non-serrated. In fairness maybe my old serrated knives were so far gone they needed more of a miracle than just a sharpening.

I am very satified with this sharpener (especially since I purchased a set of non-serrated knives).

The instructions are not that long and are very easy to follow.

I researched knife sharpeners for about one year before I bought this one. I'm happy with my purchase. You can make knives scary sharp with this device. I followed other reviewers recommendations to read the manual carefully. A little practice and you can create a very sharp knife. I can't say much more about this knife sharpener without some sort of scientific apparatus to measure how sharp is very very sharp.

I waited a long time to buy this sharpener and now wonder why. It's the best accessory I could have bought to go along with my pricey knives. The sharpener works great, and the instructions weren't nearly as "complicated" as I'd been led to believe. I'd buy this again in a heartbeat.

5 out of 5 stars Great Product   February 8, 2008

This is a fabulous product. It was able to sharpen 20 year old knives as if they were new. So much better than stones or steels. I'd recommend it without any qualifications to anyone looking for the ultimate in knife sharpening devices.
